Olive & Crust is a Dublin-based food business specialising in Tuscan schiacciata sandwiches, a thin, crisp, golden flatbread baked with extra virgin olive oil and filled to the brim with quality ingredients.
Our dough is slow-fermented and baked fresh, giving it a light, airy texture and a satisfying crunch. We pair it with imported Italian meats and cheeses, fresh local vegetables, and our own pestos, creams and spreads, made in small batches.

What Is Schiacciata?
In Florence, schiacciata is the everyday bread of the city a flatbread brushed with olive oil, baked until it's crisp on the outside and soft inside.
We use it as the base for our sandwiches: warm, fragrant bread sliced open and packed with fillings, so every bite has texture, flavour and crunch.
